Whisk the whole wheat flour along with a pinch of salt, baking powder and baking soda in a large bowl and keep aside.
Add the banana and strawberries in a blender and blend at lowest spend into a chunky puree.
Add the eggs, buttermilk, vanilla extract and sugar (if using). Blend for a minute. It is fine to have few chunky pieces of strawberries.
Add the wet mixture into the dry flour blend and mix until just incorporated.
Heat a non-stick frying pan and lightly grease with oil or butter.
Pour about ¼ cup of batter into the hot pan. Let it cook undisturbed, till bubbles appear on the surface.
Flip with a spatula, and cook until browned on the other side. Repeat with the remaining batter.
To make it extra special for Valentine’s Day, either try to pour the batter in a free form heart shape. Or make round pancakes and use a heart shaped cookie cutter to cut into little heart pancakes.
Serve warm with Maple syrup or honey. You can also try cream.
