In a wok, heat oil. Add cumin seeds to it. Once the seeds crackle, add curry leaves and minced garlic. Stir fry for few seconds.
Add sliced onions and saute for a minute. next add the chopped tomato and stir fry until they turn mushy.
Now tip in the spice powders, salt and mix well. To this add the chopped okra and stir fry for a minute or two. Cover cook until the okra is soft.
Now add the cooked rice and mix well with the okra masala. Take care not to break the rice while doing so.
Cover cook for another 2-3 minutes on low flame. Put off the flame.
This deliciously nutritious okra rice goes well with curd or raita and papadam.
