  • ¾ tbsp chopped garlic
  • 8-10 cashews, split
  • A handful of raisins
  • ½ cup chopped spring onions and bell peppers
  • 1/4 tsp curry powder
  • A pinch of salt
  • 1 cup pineapple chunks
  • 1 tsp fresh coriander leaves, chopped
  • A little extra oil for frying

Instructions

  • Heat a pan with butter or oil. Add the cashews and fry until they turn light golden. Toss in the raisins and chopped garlic, and cook until it smells nice and fragrant.
  • Add the chopped bell peppers and spring onions. Cook until the veggies are soft but still a little crunchy.
