Whole Wheat Strawberry Banana Pancakes
Ingredients:
- 1 cup of Whole Wheat Flour
- 1 teaspoon of Baking Powder
- ½ teaspoon of Baking Soda
- A pinch of salt
- 2 ripe Bananas
- 10 medium sized Strawberries
- 1 Egg
- 1 cup of Buttermilk
- 1 tablespoon of Vanilla Extract
- 1 tablespoon of Coconut Sugar (optional)
Instructions:
1. Let’s kickstart the process of creating these delightful whole wheat strawberry banana pancakes. In a large bowl, whisk together the whole wheat flour, a pinch of salt, baking powder, and baking soda. This dry mixture will form the foundation of our scrumptious pancakes. Set it aside for now and get ready for the next step in this mouthwatering recipe.
2. Take your ripe bananas and juicy strawberries, and add them to a blender. Blend them at the lowest speed setting until you achieve a luscious and slightly chunky puree. This delightful strawberry banana mixture will be the star ingredient in our mouthwatering pancakes
3. Incorporate the eggs, buttermilk, vanilla extract, and optional sugar into the blender with the strawberry banana mixture. Blend the ingredients together for about a minute until they are well combined. Don’t fret if you spot a few remaining chunky strawberry pieces – they’ll add delightful bursts of flavor to our pancakes.
4. Now, it’s time to bring our wet and dry mixtures together. Pour the strawberry banana wet mixture into the bowl with the dry flour blend. Mix the ingredients until they are just incorporated, being careful not to overmix. This will ensure our strawberry banana pancakes have a light and fluffy texture when cooked.
5. Get your non-stick frying pan ready by heating it over medium heat. Lightly grease the pan with either oil or butter to prevent the pancakes from sticking. This will also add a lovely golden touch to our strawberry banana pancakes as they cook.
6. Pour about ¼ cup of the strawberry banana pancake batter onto the heated pan. Let it cook undisturbed until bubbles begin to appear on the surface. This indicates that it’s time to flip the pancakes and cook the other side until golden brown.
7. Gently flip the pancakes using a spatula, and continue cooking until the other side is beautifully browned. Repeat this process with the remaining batter, creating a delightful stack of pancakes that will satisfy your cravings.
8. To make it extra special for Valentine’s Day, either try to pour the batter in a free form heart shape. Or make round pancakes and use a heart shaped cookie cutter to cut into little heart pancakes.
9. Serve warm with Maple syrup or honey. You can also try cream.
Another serving option is with some juicy, fresh fruit. Go for seasonal fruit; in this case – strawberries!
If the bananas are super ripe, they are sweet enough so you don’t need any additional sugar. But if the bananas are not very ripe or the strawberries are too tart, please a tablespoon or so of coconut sugar or regular sugar. Although with the syrup and fresh fruit toppings, they’re going to be really good just the way they are!
