Gingerbread goodies are popular during Christmas season, but what we’ve got today is different! Try out these Sathumaavu Gingerbread Cookies – super healthy and yummy too! Soft and chewy in the center, crisp at the edges, perfectly spiced , these ginger bread cookies are perfect treats for the season. These cookies are guilt free and healthy as they are solely made using the nutritious Sathumaavu, also rightly known as the health mix!
Sathumaavu Gingerbread Cookies
Ingredients:
- 1 cup sathumaavu / health mix powder / whole wheat flour
- 1/4 cup jaggery powder (add up to 1/2 cup if you want sweeter cookies)
- 3 tablespoon olive oil
- 1 tablespoon water
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon clove powder
- 1/4 teaspoon nutmeg powder
- 1 teaspoon ginger powder
- 1/4 teaspoon baking powder
- Pinch of salt
Method:
1. Sift the sathumaavu flour along with spice powders, salt and baking powder 2-3 times.
2. In another bowl, mix oil with jaggery powder and 1 tablespoon water and whisk until smooth and lump free.
3. Mix the dry ingredients with wet ingredients and mix to form a tight dough. If the dough is very dry, use a few drops of water to loosen it up. If the dough is very sticky, add a little flour to bind it together.
4. Cover the dough in cling wrap and refrigerate for 10-15 minutes. Do not refrigerate the dough for longer or else it will become too dry to roll out.
5. While the dough is in the fridge , preheat the oven at 180 degrees Celsius for 10-15 minutes.
6. Remove the dough and place it between two sheets of parchment paper and roll out into a sheet of 1/4 inch thickness with the help of rolling pin.
7. Cut out cookies of desired shape with the help of cookie cutters and arrange them on a baking tray. Bake the cookies at 180 degrees Celsius for 10 minutes per batch either in an oven or a microwave oven in convection mode.
8. The cookies will look soft while they are hot , but they harden as they cool down, so do not increase the time of baking. Let the cookies to cool on a wire rack.
9. Transfer the cookies to an air tight container.
