With the festivals coming up, one thing everyone’s going to be making lots of is sweets. And one sweet that’s guaranteed to make a presence in every home is burfi! Burfis are available in all imaginable varieties, but today we have one that’s high on health and taste – Sathumaavu Burfi. Sathumaavu burfi or fudge is a yummy and healthy dessert, packed with goodness of nuts and the nutrition of organic Sathumaavu mix. So let’s go ahead and make some sweets!
Sathumaavu Burfi / Sathumaavu Fudge Recipe
Ingredients:
All measurements use a cup measurement where 1 cup = 200ml
- 1 cup Sathumaavu Mix
- 1 cup whole wheat flour
- 4 tbsp ghee / clarified butter
- 1 cup sugar
- 1 cup water
- 3-4 tbsp sliced almonds and pistachios
Method:
1. Heat a heavy-bottomed saucepan or wok. Add the wheat flour , Sathumaavu mix and give it a stir.
2. Add 4 tbsp ghee to the flour mix. Fry the flours on a low flame for 5-7 minutes or until we get a good aroma.
3. Meanwhile, put sugar and water in another sauce pan and put it on a medium heat. Cook the sugar syrup until it reduces to 2 string consistency.
4. Grease a baking tray or line it with parchment paper. Add the sugar syrup to the roasted flour mixture and stir quickly, so that the mixture is even and without any lumps. Turn off the flame.
5. Pour the fudge mixture into the tray. Grease the bottom of a small bowl and use it to spread and flatten out the fudge mix. Garnish with sliced Almonds and Pistachios. The fudge begins to set immediately, so quickly cut it into desired shapes.
Sathumaavu burfi is ideal for a grab and go snack, and a healthy treat to sneak into your child’s lunchbox too. This fudge can be stored for up to 15 days at room temperature, which means this is a great sweet to make ahead. That way you can be stress free during the actual festival and enjoy the time with your family!

yes you cna try jaggery, will stay good for 3 to 4 days if stored in an airtight container
