Homemade Easy Matka Kulfi Recipe without Khoya for Kids
Ingredients:
- 1 and 1/2 litre milk
- 3/4 cup sugar
- 10-15 almonds soaked and peeled
- 1 tbsp pistachios
- 2 tbsp cashew nuts soaked
- 1 tsp khus khus soaked
- 2 tsp pumpkin seeds soaked
- Less than A pinch of black pepper powder
- Saffron soaked in milk
- 1/2 tsp cardamom powder
Method:
1.To prepare the homemade matka kulfi, start by taking milk in a heavy-bottomed pan and bringing it to a boil. This essential step sets the foundation for creating the delightful kulfi treat.
2. Now, reduce the heat and allow the milk to simmer until it reduces to half its original quantity. This process is crucial for achieving the desired consistency and richness in your homemade matka kulfi.
3. Stir the milk regularly to prevent it from burning and sticking to the bottom of the pan. This ensures that your homemade matka kulfi turns out smooth and creamy, without any unwanted burnt flavors.
4. Grind the dry fruits into a fine paste while the milk simmers. This paste will enhance the texture and flavor, creating a delectable treat.
5. Add saffron milk and sugar to the reduced milk. These ingredients enhance the flavor and sweetness, creating a delightful treat.
6. To further elevate the flavor profile of your homemade matka kulfi, sprinkle in some cardamom powder. This aromatic spice adds a touch of warmth and depth, enhancing the overall taste experience of your delicious treat.
7. Mix in the dry fruits paste. This adds a delightful texture and nutty flavor, taking it to the next level of deliciousness.
8. Continue to simmer the mixture, allowing it to further reduce. This step intensifies the flavors and thickens the consistency, creating a luscious and creamy dessert that will melt in your mouth
9. Remove from heat and let it cool. This cooling process helps your homemade matka kulfi to set perfectly, allowing you to enjoy a delicious and refreshing treat for Holi.
10. Once cooled down pour it in kulfi moulds or earthen pots and keep it in freezer to set.
Garnish it with Ground Pista and dry fruits.

Easy Homemade Kulfi Recipe without khoya
Ingredients
- 1 1/2 Litermilk
- 3/4 cup sugar
- 10-15 almonds soaked and peeled

Instructions
- In a heavy bottom pan take milk and give it a boil.
- Now simmer the gas and let the milk boil till it reduces to half the quantity.
- Stir it regularly to avoid the milk from burning.
- Meanwhile grind all the dryfruits and make a paste.
- When the milk is reduced add saffron milk and sugar in it.
- Add cardamom powder.
- Add dryfruits paste.
- Further reduce the milk.
- Once it gets thickened turn off the gas and allow it to cool.
- Once cooled down pour it in kulfi moulds or earthen pots and keep it in freezer to set.
