Most Indian sweets are made with cow’s milk, which is a great way to get fussy eaters to eat dairy. However, our little ones under 1 year cannot be fed with cow’s milk. The same goes for sweeteners like sugar, jaggery or honey. So does that mean that they miss out on delicious treats on festive occasions? Not if we can help it!
The trick is in finding an baby-friendly substitute for cow’s milk, and coconut milk is an excellent choice. This Rice pudding in coconut milk recipe is a delicious, creamy recipe that can be fed to babies above 8 months of age. I have used My Little Moppet food’s Dry Dates Powder and Mixed Nuts Powder in this recipe which sweetens the pudding and makes it more nutritious and of course, yummier!
Rice Pudding in Coconut Milk
Ingredients:
- 2 tablespoon rice (I have used basmati rice)
- 1 1/2 cup coconut milk ( homemade)
- 1 teaspoon My Little Moppet food’s dry dates powder
- 1/4 teaspoon My Little Moppet food’s Mixed Nuts Powder

Method
1. Wash rice thoroughly under running water and soak it in 1/2 cup drinking water for 30 minutes.
2. After 30 minutes, pulse the rice with little water to get a paste.
3. Transfer this paste to a sauce pan along with coconut milk and stir well to get a lump free solution. Heat this sauce pan on low to medium flame and cook the pudding for 5-7 minutes while stirring continuously.
4. Add the dry dates powder and mixed nuts powder to the pudding and stir well. Cook for another 2-3 minutes and put off the flame. The pudding will thicken further as it cools, so adjust the cooking time accordingly.
5. Spoon out the pudding in a bowl and serve to your baby.
Coconut milk can be easily extracted at home from fresh scrapped coconut. To make the coconut milk at home, grind 1 cup scrapped fresh coconut with 2 cup of hot water in a grinder jar. Strain the liquid using a strainer. Again add 1 cup of hot water to the same coconut and pulse 2-3 times to extract more milk. Strain the milk.
