Ingredients:
- 1/4 cup quick cooking oats
- 1 tablespoon finely chopped onion
- 1 garlic cloves , chopped or minced
- 2 tablespoon finely chopped tomato
- 2 tablespoon grated carrot
- 2 tablespoon fresh green peas
- 1 tablespoon sweet corn (optional)
- 1 tablespoon coriander, finely chopped
- 1/4 teaspoon cumin seeds
- 1/2 teaspoon black pepper powder
- Pinch of turmeric powder
- Salt to taste
- 2 teaspoon ghee
Method:
1. Start by heating a saucepan and adding a dollop of ghee. Allow the cumin seeds to crackle.
2. Next, add minced garlic, and then toss in finely chopped onions.
3. Saute the mixture for a while. Then, add all the vegetables, except for the coriander leaves, and stir-fry them together.
4. Season with a pinch of salt (for babies over 1 year) and turmeric powder. Give it a good stir, cover the pan, and let the veggies cook for 2-3 minutes.
5. Pour 2 cups of water into the pan and bring it to a boil. Add the oats and mix thoroughly to prevent lumps from forming.
6. Reduce the heat to a simmer, cover the pan, and allow the khichdi to cook for 2-3 minutes. Finally, sprinkle finely chopped coriander leaves and a pinch of black pepper powder. Give it a good mix and turn off the flame. Your delicious oats khichdi is now ready to be served to your little one!
