Kids are always drawn to fried rice and noodles, but as Moms, we worry about the MSG and other preservatives in it. That’s why it’s always better to make it at home, like this bell pepper fried rice recipe! Bell peppers or capsicums are high in antioxidants, minerals and essential vitamins. They are versatile and available in many colors, making this the perfect recipe for fussy toddlers.
Bell Pepper Fried Rice Recipe
Ingredients:
- 1 cup cooked rice
- 1 small green bell pepper, de-eeded and chopped
- 1 small red bell pepper, de-seeded snd chopped
- 1 small yellow bell pepper, de-seeded and chopped
- 1 onion finely sliced
- 2 cloves on garlic
- 1/2 inch root ginger
- 1 bay leaf
- 2 cloves
- 1/4 teaspoon cumin seeds
- 1/2 teaspoon black pepper powder
- Salt to taste
- 1 tablespoon ghee
Method:
1. Heat ghee in a non stick wok. Add cumin seeds. Once the seeds crackle, add the bay leaf and cloves. Fry the spices for few seconds.
2. Add finely chopped garlic and ginger and stir fry til the raw smell goes.
3. Now add the onion slices and stir fry for 1-2 minutes or until the onions turn translucent.
4. Add chopped colored bell peppers and stir fry on high flame. Cook while stirring for 2-3 minutes more. Add salt and mix.
5. Once the bell peppers turn little soft, add cooked rice and toss well.
6. Stir fry for another 1 minute or so and cook for 1-2 minutes. Put off the gas and season the rice with freshly crushed black pepper. Serve warm.
The colored bell peppers not only add to the nutrition of the rice dish but also make it very appealing. Kids will love it for sure. The dish is mildly spicy and aromatic because of the use of whole spices. If we have cooked rice ready at hand, this dish can be made in a jiffy. Bell Pepper Fried Rice should be fed to 1.5 year + old children. So, No you should not feed this to your 10 month old child. But you can try various recipes for 10months old child by looking into the below given food chart link.
