Maize Flakes Soup Recipe for Kids
Ingredients:
- 100% Organic Maize Flakes – 1/2 cup
- Vegetable stock – 2 cups
- 1 small Carrot , finely chopped
- 2-3 French beans , finely chopped
- 1 Onion, finely chopped
- Sugar – 1 tbsp
- Freshly ground Black Pepper – 1 tsp
- Butter – 1 tbsp
- Salt to taste
Method:
1. Soak the maize flakes in water with a pinch of salt for 2 minutes. Drain and soak the flakes again in clean water for 10 minutes.
2. Transfer the soaked maize flakes to a small grinder jar with 1/2 cup of vegetable stock and grind to a smooth paste.
3. In a non-stick saucepan, heat butter. Add finely chopped onions and saute for a minute. Now add the carrots and French beans. Stir fry for another minute or so.
4. Add the maize puree and the remaining vegetable stock to the veggies. Mix well and allow the soup to come to a boil.
5. Once the soup comes to a boil, season with salt, sugar and black pepper powder. Give a quick stir and cook the soup for another 1-2 minutes. Turn off the flame.
6. Pour into bowls. Serve the soup hot and enjoy.
Note: You may use milk or plain water if vegetable stock is not available.
This recipe is very easy and the added vegetables make the soup all the more healthier. Unlike the soups from restaurants, this soup doesn’t contain any artificial thickeners like corn flour. This makes it perfect even for toddlers! If your child is very young, you can stick to the vegetable stock and avoid the vegetable pieces – just to prevent choking. This is going to be a big heat in the coming winter, and is going to feature on your menu quite often!
